Instant Pot Vegetable Pasta | One Pot Elbow Pasta
This is easy one pot pasta recipe, here elbow pasta is used.
INGREDIENTS:
- 2 tbsp olive oil
- 1/2 tsp cumin seeds
- 1 cup chopped onion
- 2 tbsp chopped Garlic
- 2 cups mixed vegetables (chopped carrots, green beans, corn, green peas)
- salt per taste
- 1 tsp red chili powder (adjust per taste)
- 1 tsp garlic powder
- 1 tsp Rosemary (optional)
- 1 tsp oregano
- 2 cups Pasta Sauce (Organic marinara sauce, you can use any pasta sauce)
- 4 cups elbow pasta (1 lb.)
- 6 cups of water
- 1 tsp soy sauce
- 1 tsp pepper powder
- 1 cup grated mozzarella cheese
- chopped green onions (optional)
- black olives (optional)
STEP BY STEP VIDEO :
INSTRUCTIONS:
- Turn on Instant pot saute mode, when pot is hot add olive oil and cumin seeds.
- Add chopped onion, garlic - saute until onion turns into light brown.
- Add mixed vegetables of your choice - Saute for a minute.
- Add salt, red chili powder, garlic powder, rosemary, oregano, pepper powder, soy sauce and elbow pasta - Give a quick mix.
- Add water ( 1 cup pasta : 1.5 cups water) - mix it well
- Close the lid with sealing position. High pressure for 3 minutes.
- Open the lid after 5 minutes quick release.
- Garnish with grated cheese, chopped green onions, olives. Serve it hot.

NOTE:
- You can use frozen mixed vegetables or choice of your fresh vegetables.
- Here I used 6QT DUO instant pot.
- You can reduce the spice level by reducing the chili powder and pepper powder.
- You can skip the spices if it is not available.
