Vermicelli Kheer also known as Semiya Payasam, Vermicelli payasam, Vermicelli Pudding, Seviyan kheer. People can make this during festivals and celebrations, it is super quick to make.
Semiya Payasam is a south Indian dessert, generally whole wheat vermicelli is used. Sugar can be replaced with jaggery or brown sugar since it is a healthier choice.
INGREDIENTS:
- 1 tbsp ghee
- 3 tbsp mixed nuts
- 1 tbsp raisins
- 1/2 cup Vermicelli (Bambino Roasted Vermicelli)
- 3½ cup milk
- 1/4 cup sugar / brown sugar (adjust to taste)
- 1/4 tsp cardamom powder (optional)
- pinch of salt
- Saffron (optional)
INSTRUCTIONS:
- Turn on instant pot saute mode, when pot is hot, add ghee. Add mixed nuts - stir until it turns to light brown, add raisins.
- Add vermicelli - Saute for a minute.
- Add sugar, milk, cardamom powder, pinch of salt, and saffron. Mix them all. Close the lid with sealing position.
- Cancel saute mode, set high pressure for 5 minutes.
- Open the lid after natural pressure release.
- Thick Creamy Vermicelli Kheer is ready!
NOTE:
- Here Instant Pot 6qt DUO is used.
- Use any wheat vermicelli, here Bambino roasted vermicelli is used.
