Creamy and delicious Indian pudding made with quinoa, milk and sugar. Quinoa kheer, quinoa pudding or quinoa payasam. It can be served both warm or chilled.
- 1/2 cup quinoa
- 1 tbsp ghee
- 1/4 cup chopped nuts
- 1 tsp raisins
- 1/2 cup brown sugar / sugar
- 4 cups milk saffron
- 1/2 tsp cardamom powder
- pinch of salt

INSTRUCTIONS:
- Rince and soak quinoa for 20 minutes
- Turn on instant pot saute mode, when pot is hot, add ghee.
- Add chopped nuts and raisins - saute until it turns into light brown.
- Add soaked and drained quinoa - saute for a minute.
- Add brown sugar, milk, saffron, cardamom powder and pinch of salt.
- Close the lid with sealing position.
- Cancel saute mode, set high pressure for 5 minutes.
- Open the lid when it is done.
- Delicious Quinoa Kheer is Ready!
