Instant Pot Chicken Curry Indian style

INGREDIANTS:

  • 3 lbs - Chicken thighs- Cut and Clean
  • 1 tbsp oil 
  • 2 Bay Leaves
  • 2 Cloves 
  • 1 stick Cinnamon
  • 1 Cardamom 
  • 2 Star Anise
  • 4 cups Chopped Onion 
  • Curry leaves (optional)
  • 2 tsp Ginger Garlic Paste 
  • 3 Serrano Pepper/ Green Chilies
  • 2 cups Chopped Tomato 
  • 1/4 cup mint leaves
  • Salt to taste 
  • Powder: 
    • 1/2 tsp Turmeric Powder 
    • 1 tsp Red Chili Pepper Powder (adjust to taste) 
    • 2 tbsp Coriander/ Dhaniya Powder 
    • 1 tsp Garam Masala Powder 
  • To make a paste: 
    • 1 tsp pepper (adjust to taste) 
    • 2 tsp cumin seeds 
    • 1 tsp fennel seeds 
    • 1/4 cup chopped coconut 
    • 1/2 cup warm water 
  • Cilantro chopped 
  • 2 tsp lemon juice

INSTRUCTIONS:
  • Cut and clean chicken thighs with bones.
  • In a blender add chopped coconut, pepper, cumin seeds, fennel seeds - Blend it smooth with water - keep it aside.
  • Turn on instant pot saute mode, add oil when it is hot.
  • Add bay leaves, cloves, cinnamon, cardamom, star anise, curry leaves - wait until it splutters.
  • Add chopped onion, green chilies, ginger garlic paste - Saute until onion turns into light brown.
  • Add tomato, mint - Saute until tomato is soft.
  • Add salt, turmeric powder, red chili powder, coriander powder, garam masala - give it a quick mix.
  • Add chicken pieces - saute for a minute.
  • Add 1/4 cup water, close the instant pot lid
  • Cancel saute mode, set low pressure for 3 minutes.
  • Open the lid after the nature pressure release. Now turn on Saute mode again.
  • Add the coconut paste and boil for 5 minutes.
  • Add chopped cilantro and lemon juice.
  • Delicious Chicken Curry is Ready, it goes well with rice and roti.


NOTE:
  • Here I used instant pot 6 QT DUO.
  • Use chicken with bones, so curry will be very tasty.
