Instant Pot Bitter Gourd Fry/ Karela Dry Sabji in Instant Pot / Bitter Gourd One pot recipe / Instant Pot Vegeterian Recipe / Bitter Gourd Dry Curry
INGREDIANTS:
- 1 lb bitter gourd chopped
- 3 tsp oil
- 1/4 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp urad dal
- curry leaves
- little asafotida
- 1 cup chopped onion
- 1 cup chopped tomato
- salt per taste
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder (adjust to taste)
- 1 tbsp water
- chopped cilantro

INSTRUCITONS:
- Clean and cut bitter gourd
- Turn on instant pot sauté mode, when pot is hot, add 3 tsp oil.
- Add mustard seeds, cumin seeds, urad dal, curry leaves and little asafotida.
- Add chopped onion - saute until onion turns into light brown
- Add chopped tomato - saute for 2 minutes
- Add chopped bitter gourd - saute for a minute
- Add salt, turmeric powder and red chili powder - Quick stir.
- Add 1 tbsp water. Close the instant pot, and cancel saute mode.
- Set low pressure for 3 minutes. When it is done, Cancel and quick release after 10 minutes.
- If needed saute for a minute. Garnish with chopped cilantro.
