INGREDIENTS:
- 2 cups chopped tomato
- 1 cup chopped cilantro
- 1 tbsp water (optional)
- 2 tbsp oil
- 2 tsp urad dal
- 1 tsp cumin seeds
- 4 garlic
- salt (adjust to taste)
- 6 to 10 red chilies (adjust to taste)
- Little tamarind/imly
- little hing / asafotida
- 1/4 cup chopped coconut
- Curry leaves
- Tempering:
- 1 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal

Check these other delicious chutney:
- Turn on instant pot saute mode. When it is hot, add oil.
- Add urad dal, cumin seeds, hing, garlic, tamarind, curry leaves, coconut and red chilies - saute for 30 seconds.
- Add chopped tomato and chopped cilantro - saute for 2 minutes.
- Turn off saute mode - Let it cool down.
- Transfer it to the blender and add salt. Blend it until smooth, if needed add upto 1 tbsp water.
- For tempering:
- Heat the pan on the stove top, add oil.
- when oil is hot, add mustard seeds, urad dal, hing and curry leaves. Wait until it splutters.
- Pour it to the chutney. Delicious tomato chutney is ready.
- It goes well with Dosa or Idly.
NOTES:
- Here I used 6 qt DUO instant pot. You can make the same recipe on stove top too.
- You can reduce the spice level, by reducing red chilies.
