Peanut is also called Groundnut, this chutney is made regularly at home for breakfast for Idly or Dosa. This is protein rich chutney made from roasted peanuts, red chilies and spices.

INGREDIENTS:
- 1 cup raw peanuts
- 1.5 to 2 cups water (adjust to consistency)
- 2 tsp oil
- 2 garlic
- salt (adjust to taste)
- 4 red chilies (adjust to taste)
- Little tamarind/imly
- 1/2 tsp urad dal
- 1/2 tsp cumin seeds
- little hing / asafotida
- Curry leaves
- Tempering:
- 1 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- asafotida/hing
- curry leaves
STEP BY STEP VIDEO:
INSTRUCTIONS:
- Turn on instant pot saute mode. When it is hot, add oil.
- Add urad dal, cumin seeds, hing and curry leaves. Wait until it turns light brown.
- Add garlic, red chilies and tamarind - saute for 30 seconds.
- Add raw peanuts - fry until peanuts turns into light brown. Add salt.
- Turn off saute mode - Let it cool down.
- Transfer it to the blender and add water. Blend it until smooth.
- For tempering:
- Heat the pan on the stove top, add oil.
- when oil is hot, add mustard seeds, urad dal, hing and curry leaves. Wait until it splutters.
- Pour it to the chutney. Delicious peanut chutney is ready.
- It goes well with Dosa or Idly.
NOTES:
- Here I used 6 qt DUO instant pot. You can make the same recipe on stove top too.
- If you have roasted peanuts, making this chutney will be very quick.
- You can reduce the spice level, by reducing red chilies.
- You can skip the tempering, still it will be Delicious.
