INGREDIENTS:
- 1 cup basmati rice
- 1 to 2 cups chopped lamb/ mutton
- 2 tsp oil
- 2 tsp ghee /clarified butter
- 1 cup chopped onion
- 1 tsp ginger garlic paste
- 1 chopped tomato
- 2 Serrano pepper/ green chilies
- 1 cup mint
- Salt to taste
- 1/4 cup Yogurt
- 1/2 cup coconut milk
- Cilantro chopped
- To cook mutton:
- 1/4 tsp turmeric powder
- 1/2 tsp salt
- 1/4 tsp red chili powder
- 1/2 tsp coriander powder
- 1/2 tsp oil
- Powder:
- 1/2 tsp turmeric powder
- 3/4 tsp red chili powder
- 1 tsp coriander/dhaniya powder
- 1/2 tsp garam masala powder
- Tadka/ Tempering:
- 2 Bay Leaves
- 2 Cloves
- 2 stick Cinnamon
- 1 Cardamom
- 1 Star Anise
- dagad phool/kalpasi
- 2 tsp Cumin Seeds

INSTRUCTIONS:
- Add lamb pieces to the vessel. Add turmeric powder, red chili powder, corriander powder, salt and oil. Mix it with water.
- Add 1 cup water to the bottom of the pot, place trivet. Keep the lamb vessel inside. Close the lid with sealing position.
- Set high pressure for 10 to 15 minutes. Cancel after it is done, open the lid after Natural Pressure Release.
- Drain and save the water from cooked lamb.
- Rince and Soak the Basmati Rice.
- Turn On Instant Pot - Saute mode. When it is hot, add oil and ghee.
- Add Bay Leaves, Cloves, Cinnamon, Cardamom, Star Anise, dagad phool and cumin seeds. Wait until it splutters.
- Add chopped onion, ginger garlic paste and green chilies - Saute until onion turns into light brown.
- Add chopped tomato and mint - Saute for 2 minutes.
- Add cooked lamb with turmeric powder, red chili powder. coriander powder, garam masala powder and salt. Give a quick stir.
- Add soaked and drained rice - mix it all together.
- Add yogurt, coconut milk and water. Here you can use the water that we saved from cooked lamb. For 1 cup rice, the liquid ratio should be 1.5 cups water - mix it.
- Close the lid with sealing position, cancel saute mode - set 5 minutes high pressure.
- Cancel after 10 minutes and quick release.
- Garnish with cilantro and give a gentle mix.
- Yummy Lamb Biryani is ready to eat.
