Chayote is a type of squash and also called chow chow. It is rich in nutrients, and low in calories, carbs and fat. It will help to keep the blood sugar under control, it is low in calories, and high in fiber, which supports weight loss and helps you to feel fuller for longer.
Making Chayote in instant pot is quick and easy, it can be prepared in less than 10 minutes. It can be eaten with Rice.
INGREDIENTS:- 2 medium size Chayote/ Chow chow
- 1 tbsp oil
- 1/2 Cup Chopped Onion
- 3 Green Chilies / Serrano Peppers
- 1 tsp water
- Salt as needed
- Cilantro chopped (optional)
- 1 tbsp dry coconut powder
- Tempering:
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1 tsp Urad dal / White Gram
- 2 tsp Chana Dal / Split Bengal Gram
- Hing / Asafotida (little)
- Curry Leaves (optional)
- Masala Powders:
- 1/2 tsp Turmeric Powder
- 1/2 tsp Red Chili Pepper Powder (adjust to taste)

- Peel and cut the chayote into small pieces.
- Turn on instant pot saute mode. When it is hot, add oil.
- Add mustard seeds, cumin seeds, urad dal, chana dal, hing and curry leaves. Wait until it splutters.
- Add chopped onion and green chilies - Saute until onion turns into light brown.
- Add chopped chayote - Saute for 30 seconds.
- Add turmeric powder, red chili powder and salt - Mix all together with little water.
- Close the lid with sealing position. Set Low pressure 0 (zero) minutes. Cancel/turnoff after 5 minutes.
- Open the lid after 5 minutes quick release. Garnish with chopped cilantro and coconut powder.
- Yummy and quick Chow chow curry is ready in 5 minutes.
