INGREDIENTS:
- 1 cup steel cut oats
- 2 cups water
- 1/2 cup chopped onion
- 1/2 tsp ginger garlic paste
- 1/2 cup chopped tomato
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder (adjust to taste)
- salt (as per taste)
- Tempering:
- 2 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 1/2 tsp cumin seeds
- curry leaves
- Mixed vegetables: (any vegetables)
- 1/2 cup chopped carrots
- 1/2 cup chopped green beans
- 1/4 cup green peas

INSTRUCTIONS:
- Turn on instant pot saute mode. When it is hot, add oil.
- Add mustard seeds, cumin seeds, urad dal and curry leaves. wait until it splutters.
- Add chopped onion, ginger garlic paste - saute until onion turns light brown.
- Add chopped tomato - saute for a minute.
- Add your choice of vegetables, here I added chopped carrots, chopped green beans and peas. Saute for a minute.
- Add turmeric powder, red chili powder, and salt. Quick stir.
- Add steel cut oats and mix with water. For 1 cup steel cut oats, you can add 2 cups of water.
- Close the instant pot lid with sealing position. Set high pressure 1 minutes.
- Cancel after 5 minutes and quick release.
- Open the lid, garnish with cilantro. Mix it well.
