Sooji halwa is popular Indian sweet dish and it is also called Rava Kesari or Kesari Bath. . It’s very simple and fast to cook. Sooji halwa is prepared during several festive occasions.

INGREDIENTS:
- 1 cup Sooji/Rava
- 1 cup Sugar
- 2 1/4 cup Water
- 4 tbsp Ghee
- Pinch of salt
- Food color (optional)
- Cardamom (optional)
- 2 tbsp Cashews
- 2 tbsp Raisins

INSTRUCTIONS:
- Turn on Instant Pot - saute mode
- Add ghee, when it is hot add cashews and raisins. Stir until it turns light brown.
- Add sooji and roast it for a minute, it turns to golden brown and a beautiful aroma spreads out in the kitchen..
- Add sugar, salt, food color, and cardamom with water.
- Close the instant pot with sealing position.
- Cancel saute mode, set manual high pressure for 1 minute. Pressure may not build up (the valve may not raise up)
- Open the lid after 5 minutes. Mix it well, transfer it to the bowl.
- Yummy Sooji Halwa is Ready!
Note:
- Adding salt will enhance the flavor.
- People who like to have more sweetness in their Sooji halwa can slightly increase the quantity of sugar as per their taste.
- Food color can be avoided.
- Saffron can be added instead of food color.
