Foxtail Millets are healthy carbs, high in fibre and low in glucose, therefore, making them an ideal choice for weight-watchers.
INGREDIENTS:
- 1 cup Foxtail Millet/Thinai/Kangni/Korrala
- 3 tbsp oil
- 1 tbsp Ghee
- 2 cups of water
- 1 cup chopped onion
- 1 tbsp chopped ginger
- 1/2 cup chopped carrot
- 3 Serrano Pepper/ Green Chillies
- 1/2 tsp turmeric powder
- Salt to taste
- Cilantro chopped
- Tadka/ Tempering:
- 1/2 tsp Mustard Seeds
- 1 tsp Cumin seeds
- 1 tsp Urud dal/ White Gram
- 1 tsp Channa dal / Split Bengal Gram
- Curry leaves (optional)
- Hing / Asafoetida (little)

Instructions:
- Wash and drain the foxtail millet. Turn on instant pot saute mode.
- When pot is hot, add oil, mustard seeds, cumin seeds, urud dal, channa dal, curry leaves and hing.
- Add chopped onion, chopped ginger and green chillies - Saute until golden brown (2 minutes)
- Add chopped carrots and saute for a minute.
- Add foxtail millet and saute for a minute
- Add turmeric powder and salt - give a quick mix.
- Add water (1 cup millet = 2 cups of water) and mix it all together. Close the instant pot with sealing position.
- Set High pressure for 7 minutes.
- Open the lid after natural pressure release. Add chopped cilantro and ghee. Give a gentle mix.
