INGREDIENTS:
- 7 Eggs
- Cooking Spray/Avacado Oil
- 5 tbsp Oil / coconut or Avacado oil
- 1 Cup chopped Onion
- 1 Cup chopped Tomato
- 1 tbsp Ginger Garlic Paste
- Salt as needed
- Chopped cilantro to garnish
- FOR TEMPERING:
- 1 tsp Cumin Seeds
- Curry leaves (optional)
- MASALA POWDERS:
- 1/2 tsp Turmeric Powder
- 1 tsp Red Chilli Pepper Powder
- 1/2 tsp Pepper Powder
- 1/2 tsp Cumin Powder
INSTRUCTIONS:
STEP 1 : NO PEEL HARD BOILED EGGS:
- Use Cooking Spray on egg bites mold. Crack the eggs to the silicon mold.
- Add 1 cup water to the bottom of the Instant Pot - Place Trivet.
- Place Silicon mold inside - Close the lid with sealing position.
- Set Steam mode - 5 minutes.
- Open the lid after 5 minutes or Natural Pressure Release.
- Let it cool for 5 minutes.
- Gently push from bottom or scoop it with a spoon to take the eggs out- make a slit
STEP 2 : MASALA EGG FRY
- Turn on Saute Mode
- Add Oil, once hot add cumin seeds & curry leaves
- Add chopped onions, ginger garlic paste - Saute until turns golden brown
- Add chopped tomatoes - Saute until soft and mushy
- Change Saute mode to Less
- Add turmeric powder, red chilli powder, pepper powder, cumin powder, and salt - make a quick stir
- Add hard boiled eggs and gently mix so not to break the eggs - close with glass lid - stir again after a minute
- Enjoy the Spicy Masala Egg Fry.
