Sambar rice is a dish made with Lentils, Rice, mixed vegetables, & Spices. It is delicious and flavorful.It is best Served with Spicy Potato Fry.
INGREDIENTS:
- 1 1/2 Cup Sona Masoori Rice
- 1/2 Cup Toor Dal / Split Pigeon Peas
- Tadka/Tempering:
- 1/2 tsp Mustard seeds
- 1/2 tsp Urud Dal
- 1 tsp Cumin Seeds
- 1/2 tsp Fenugreek Seeds
- Hing/ Asafoetida
- Curry Leaves
- 2 Cups Chopped Onion
- 2 Green Chilies / Serena Peppers
- 1 Cup Chopped Tomato
- Choice of Vegetables:
- Chopped Carrots
- Chopped Drum Sticks
- Chopped Green Beans
- Chopped Chayote
- Masala Powders:
- 2 tbsp Sambar Powder
- 1/2 tsp turmeric powder
- 1/2 Cup Tamarind Juice (watery)
- Salt as needed
- Cilantro Chopped

- Soak Rice and Toor Dal / Split Pigeon Peas in Water
- Turn on Instant Pot - Saute Mode
- Add Oil - Once Pot is hot, add Mustard Seeds, Urud dal, Fenugreek Seeds, Cumin Seeds, Hing and Curry Leaves - Give a quick Stir
- Add Onion, Green Chillies - Saute for a minute
- Now add Tomato - Saute for a minute.
- Add your choice of Vegetables, here I add Carrots, Green Beans, Drum Sticks, Chayote - Saute for a minute
- Add Sambar Powder, Salt, Turmeric Powder - Give a Quick Stir
- Add Tamarind Juice, Rice and Dal - Mix it all together
- Add Water 5 to 6 cups - Close the Lid with Sealing Position
- Set Rice Mode or Low Pressure 12 Minutes
- Open the lid after NPR (Natural Pressure Release)
- Garnish with Cilantro and Ghee
- Mix it all - Sambar Rice is Ready
